About the Author

Rita Bingham is the daughter of Esther Dickey, who nearly 50 years ago wrote Passport To Survival- the first comprehensive book on using and storing basic foods. Before Esther passed, they worked together to create The New Passport To Survival.

Since 1966, Rita has taught and encouraged healthy eating. She uses nutritious, whole foods (Beans, Grains, Vegetables, Nuts, Seeds and Fruits) and imaginative techniques to create fast, high fiber recipes using grains and beans for every meal of the day, even snacks and desserts! Her husband (the bean artist!) 5 children, 12 grandchildren, as well as thousands of seminar participants, have given Rita’s recipes rave reviews.

Across the US and Canada, Rita has educated and encouraged individuals, restaurants, and companies to use and market Bean, Pea and Lentil Flours for soups, sauces and gravies. These flours an also be used in all types of breads, as well as in many other recipes. Bob’s Red Mill (Milwaukie, OR) and Azure Standard Bulk and Natural Foods (Durfur, OR) mill and market these versatile flours.


Her publications include a full-length video (Quick Wholesome Foods) as well as six books (Natural Meals In Minutes, Country Beans, 1-2-3 Smoothies, Food Combining, The New Passport To Survival, and Natural Sweets and Healthy Treats).

What does Rita do in her spare time?
When she’s not teaching, writing or recipe testing, Rita and her husband of nearly 50 years love being outdoors in the Pacific Northwest and Arizona where they enjoy gardening, walking, hiking, riding ATVs, and exploring. They both enjoy serving in their church and in the community. They travel often to visit children and grandchildren, as well as to see some of the many beautiful areas of the world! Rita’s hobbies are reading, painting and researching family history.
Like her mother, Rita encourages people to store a supply of food, at least enough for 3 months, and then to USE what they store. With a well-stocked pantry, and a knowledge of how to make simple meals from nutritious basic foods, anyone can “Be Prepared and Fear Not”.
